It's Friday morning and I've been up since 6 am. I may have had one of these rice krispy bars at that time and perhaps another on my way out the door three hours later. Basically I've successfully convinced myself that since they're made with brown crisped rice cereal and are sweetened with unrefined sugars that we're basically in breakfast territory here. But in reality, these are quite decadent: as if Rice Krispy treats weren't delightful enough on their own, this recipe takes them up a notch in all the right ways, adding bittersweet chocolate, almonds, toasted coconut, and a little sea salt. They're just the thing to close out this busy, whirlwind late spring week.
The more time I spend at home with Oliver, juggling a quesadilla and baby sunscreen on our way out the door, the more I think about the way we all really eat throughout the day -- and what it is we actually want to be eating. With all of the beautifully photographed food blogs and glossy monthly publications, you'd think we were all waking up in the morning and eating black sesame waffles with tahini yogurt and macha dust. Now I don't know about you, but that is decidedly not what we're waking up to around here. I'm not sure if it's because time is stretched thin now that we have a baby or perhaps it's that warmer weather is on its way -- the ultimate encouragement in fly-by-the-seat-of-your-pants-cooking -- but preparing a full meal in the kitchen feels like a luxury more than it ever has, and I find myself craving simplicity. Good, honest recipes.
Today was 75 degrees in Seattle and it seemed the whole city was out and about drinking iced coffee in tank tops and perhaps not working all that hard. When we have a hit of sunshine like this in April (or, really, any time of the year), we're all really good at making excuses to leave the office early -- or, simply, to "work from home." I just got back from LA last night, unpacked in a whirlwind this morning, and took Oliver to meet up with three friends from our parents group at the zoo. The only other time I'd been to the Seattle zoo was once with Sam a few years ago when we arrived thirty minutes before closing and ended up doing a whirlwind tour -- sprinting from the giraffes to the massive brown bear to the meerkat. The visit today was much different: we strolled slowly trying to avoid the spring break crowds and beating sun. I managed to only get one of Oliver's cheeks sunburned, and he even got in a decent nap. A success of an afternoon, I'd say. Coming home I realized we didn't have much in the fridge for lunch -- but thankfully there was a respectable stash of Le Croix (Le Croix season is back!) and a small bowl of this whole grain salad I made right before I left town. It's the kind of salad that's meant for this time of year: it pulls off colorful and fresh despite the fact that much of the true spring and summer produce isn't yet available. And for that reason, I make a few versions of it in early spring, often doubling the recipe so there's always the possibility of having a small bowl at 1 p.m. while the baby naps in the car seat, one cheek sunburned, windows and back door open -- a warm breeze creeping into the kitchen.
I've come to the conclusion that for a rather detail-oriented person like myself, the last weeks of pregnancy can feel like preparing for the apocalypse. I'm trying to fight this feeling with everything I have and remind myself that after the baby is born, grocery stores will still be open, we'll have family visiting, and friends will drop by -- but still, I've been cooking up a storm and straightening up the house as if the baby will really care. In recommending recipes to me in emails and in your comments on my last post, many of you mentioned not forgetting breakfast or something sweet, and I realized amidst the carne asada and beef stew, it'd be nice to have a small treat, too. As I scanned the archives of the blog, I realized that brownies are a bit underrepresented here, and this batch of super fudgy crackly-top, salt-sprinkled beauties is just the thing to remedy that.
Last weekend we went apple picking up near Yakima, a good three hours east of Seattle. We drove over to Harmony Orchards with our friends Brandi and John and met up with many other groups and families to amble about the rows and rows of apples in the unusually warm sun. We missed the annual picking last year as we were on our honeymoon, but the previous year was the one in which we made the colossal mistake of picking over 70 pounds of apples. I've never made so much applesauce in my life. This year we practiced restraint in bringing home a cool 38 pounds and after getting them all situated in the basement, I started to leaf through a few cookbooks looking for a great apple recipe -- something, preferably, that used quite a few apples, wasn't too sweet and could double as breakfast or dessert (really, the best kind of recipe). And that's exactly what we have in these Custardy Apple Squares.
Last weekend we went camping out on Orcas Island, my favorite of all the San Juan Islands. The trip had been on our calendar for a few months, but it seemed to sneak up quickly (hasn't that been the case this summer?) leaving us scurrying like crazy to get out of the house Friday afternoon to catch our ferry. We've been to Orcas enough times to have a favorite swimming hole, hike, and bakery, but this trip would be different as we were going car camping with three other couples and a gaggle of kids. I knew that at 24 weeks pregnant it might not be superbly comfortable to sleep in our small tent, but we were bringing air mattresses and I packed my pillow so surely all would be well. The day before we left I baked a loaf of this banana bread and stocked up on healthy snacks and fizzy water. Sam dug through the basement to find all of our camping gear. We were ready.
I had a weak moment on our honeymoon in Italy when I decided that I should be making gelato for a living. My enthusiasm for Italian gelato wasn't surprising to anyone. I'd done extensive research, made lists, had Sam map out cities in terms of where the best gelaterias were. I took notes and photos and hemmed and hawed over flavor choices: Sicilian Pistachio! Chestnut Honey! Sweet Cheese, Almond and Fig! In truth, on that particular trip, I cared far more about treats, sunshine, and cobblestone walks than I cared about famous landmarks or tourist attractions, often leaving the camera back at the hotel in favor of my small black notebook which housed detailed jottings on dessert discoveries in each city we visited. Our friends Matteo and Jessica happened to be in Naples on the one night we were there, and we all went out for pizza together followed by a long stroll around the city. At some point the conversation turned to gelato (as it's bound to) and Matteo brought up the famous school in Bologna where many renowned gelato artisans study. My wheels were spinning. Maybe we should visit Bologna. I should see this school! I should talk to these students! I could make Sicilian Pistachio; Chestnut Honey; and Sweet Cheese, Almond and Fig each and every day of our lives. Or at the very least, travel to Bologna to learn how and then come back to Seattle to take our Northwest city by storm. Well here we are six months later, back to reality, and the impetus to pack up my bags and head for Bologna has subsided for the time being ... but not the unwavering gusto to sample. That part will always be with me. It's been awhile since I mixed up a batch of ice cream at home, but the other day a beautiful new cookbook landed on my doorstep and I flipped right to a recipe for dark chocolate sorbet with toasty, salty almonds. I didn't need much convincing.
I rarely make muffins at home and never order one when I'm out and about as I find they're often far too sweet and never truly that satisfying. I realize, too, in looking back at my cookbook that there's only one muffin recipe throughout. Case in point: I'm tentative on muffins. But not these. We've been pretty thrilled to have this healthier version of Morning Glory muffins on the counter this week; they have little bits of apple, raisins, walnuts, and grated carrot and are cloaked in a buttery oat crumble topping -- quite the opposite of your boring coffeeshop fare. I thought long and hard about doing a Valentine's post, some festive cookie or confection that would be share-worthy this weekend, but the more we talked about what our weekend would really look like, it involved something special for breakfast instead. I don't remember the last time a Valentine's Day fell on a Saturday, so we have big plans to have breakfast in bed and if your plans are even remotely similar, these muffins would be a fine inclusion.
It's been a uniformly gray and rainy week in Seattle, and I'd planned on making a big pot of salmon chowder to have for the weekend, but then the new issue of Bon Appetit landed on my doorstep with that inviting "Pies for Dinner" cover, and I started to think about how long it's been since I made my very favorite recipe from my cookbook, Whole Grain Mornings. I'm often asked at book events which recipe I love most, and it's a tough one to answer because I have favorites for different moods or occasions, but I'd say that this savory tart is right up there. The cornmeal millet crust is one of my party tricks; when we need a quick brunch recipe, this is what I pull out of my back pocket because it's so simple and delicious. This is a no-roll, no fuss crust with a slightly sandy, crumbly texture thanks to the cornmeal, and a delightful crunch from the millet. In the past, I've used the crust and custard recipe as the base for any number of fillings: on The Kitchn last year, I did a version with greens and gruyere, and I teach cooking classes that often include a version heavy on local mushrooms and shallot. So if you are not keen on salmon or have some vegetables you're looking to use up this week, feel free to fold in whatever is inspiring you right now. Sometimes at this point in winter that can be hard, so hopefully this recipe may help a little.
I call this time of the year, this month of September, the "bridge month." When I made pies for a living, I called them "bridge desserts," those slices of jammy sweets that'd have one foot definitively in fall and the other stubbornly in summer. That's always how I feel come September: eagerly anticipating the changing light of the new season, but also so very hesitant for the long days to creep away. And so, today, a warm weather recipe we can all nurse for a good month more: a silky, simple gazpacho that we had for lunch (and dinner) many times last month. And given our amazing tomatoes this year, I'm hoping for a few more rounds. I went many years without making gazpacho at home; I always find that it falls into one of three camps: the good, the bad, or the ugly. And most recipes I found in the past were firmly up for Ugliest Gazpacho of the Year Award -- which wouldn't matter if they were really delicious, but that was never the case. Now how could you mess up gazpacho, really? I find that the recipes that call for bread blended into the soup always end up murky and off-color, and just not at all appealing. I don't particularly love a lot of onion blended into the soup itself, and I've seen a great many recipes that are heavily spiced with chile seasonings and it always baffles me as to why we can't just let the tomatoes shine. If you're buying ripe, in season tomatoes you need little else.
Last week, on a day that fiercely called for chocolate, I decided to make a pan of brownies along with a pan of these chocolate muffins. We brought the brownies to our friends Amber and Annie's house for a dinner party and kept the muffins on the kitchen counter where they sustained us through a few rainy, busy workdays. Sam's nephew Kevin is living with us for a while and somehow that fact alone has convinced me that we need more treats in the house (although I would like to say for the record that Kevin is far more conservative with treats than I am on most days and there's a strong chance I ate more of these muffins than both men combined). They're humble, boast just the right amount of chocolate, are wonderfully moist and even better the second day.

This time last week I was up in the Skagit River Valley sitting in the early fall sun eating wood-fired bagels and chatting with farmers, millers and bakers at the Kneading Conference West. I made homemade soba noodles, learned the ins and outs of sourdough starters, and sat in on a session where we tasted crackers baked with single varietal wheats. It was like wine tasting, but with wheat and the whole time I kept pinching myself, thinking: THESE ARE MY PEOPLE! I don't get the opportunity to be a student much these days -- usually on the other side of things teaching cooking classes or educating people at the farmers markets about whole grains and natural sugars. So to just sit and listen with a fresh (red!) notebook and a new pen was surprisingly refreshing. I miss it already. Thankfully, this cookie recipe has come back as a memorable souvenir, and one that is sure to be in high rotation in our house in the coming months.
We walked to the library last week and I had a strange realization standing in line watching Sam check out his usual massive stack of books: Will I ever have the time to read stacks of books again? I used to be much more of a reader than I am today -- a fact I'm not at all proud of. But when evening rolls around and the more formal workday ends, I find emails and other odds and ends creep in. Walking home from the library, I began obsessing over free time for reading, asking Sam if we'd ever be those two old people who study bird manuals and can recognize birds on walks. I want to have the time to read bird manuals someday. For now though, we're young and we're working a lot. We did sneak away on that one-night camping trip I told you about, and cooked some interesting, haphazard meals which I hope to share with you soon. For now though, for summer: a strawberry dessert recipe.
I wake up in the morning and consult the Google calendar. Lately I'm not sure how I could make much of anything happen without it. Tasks are driven largely by to-do lists with breaks for an occasional lunch. And lots of granola baking in between. My yoga teacher hasn't seen a whole lot of me, and Sam and I finally went grocery shopping for real last night (it's been awhile). This time of year seems populated by things that other people need done: from the farmers market organizers to new Marge vendors and book-related emails -- there's a lot to tend to. That is, until the craving to bake cookies strikes on Sunday night and it seems that, actually, everyone can wait.
When I was single and living alone in the Bay Area, I made virtually the same thing for dinner each night. I ate meals quickly while in front of the computer. Or even worse: the television. This most often included what I call "Mexican Pizzas" which were basically glorified quesadillas baked in the oven until crispy. Sometimes, if I was really feeling like cooking, I'd whip up a quick stir-fry with frozen vegetables from Trader Joe's or a mushroom frittata using pre-sliced mushrooms. Mostly, though, it was Mexican Pizzas -- a good four or five nights a week. Today, thankfully, dinner looks a lot different. Meals in general look a lot different. How would I explain that difference? I think that ultimately how we feel about our life colors how we choose to feed ourselves and the importance that we place on preparing our own meals.
This past Sunday morning found Sam in the living room reading the paper and listening to records and me taking mad scientist notes in the kitchen, working on this humble beauty. I'd stumbled across a recipe for a honey cake that I wanted to make but as I was converting the grams into standard cup measurements for you all, I began tinkering. And tinkering. And downright altering the recipe until it really was no longer the honey cake recipe I'd become enamored with. I just couldn't help but think it should have cornmeal in it, and that spelt flour would make for a really delicate crumb while whole-wheat flour would hold down the fort, so to speak. Sam was reading the Book Review; I was crossing my fingers, staring in at the cake and wondering what I'd done.
I moved to Seattle last February so this January business is all new to me. I remember pulling into the city in the U-Haul we lovingly named Hugh on a sunny February afternoon. We were eager with anticipation and hope, schlepping everything into the house in tee-shirts with a few strong helpers and occasional mild cursing. Seattle really made a showing that day. I'm gathering that wasn't exactly typical, although I really do appreciate the gesture. This year the winter mornings have not been warm enough to encourage tee-shirts. They've been quiet, extremely cold but -- lately -- startlingly sunny. That bright light, despite the layer of ice on my car, has helped get me to yoga when I'd much rather stay inside nursing a cup of coffee. It's been enough to inspire me to send letters to old friends, organize all of my tax documents, make some pretty great oatmeal and take long winter walks with Sam. I'm not letting myself have the space or the moment or the luxury to miss those warm summer days that now seem like a distant memory. I know they'll come back (they will, right?). For now, there's just putting one foot in front of the other, getting my work done, and sneaking out in that light whenever it decides to make a showing.
Hello from the other side! I realize we haven't been back here for a few weeks, and I'm sorry for dropping into a little black hole. My cookbook deadline was Monday, so I've been a writing and editing machine, stepping away from the computer to occasionally clean the house like a crazy person or throw together a most random lunch or dinner. But somehow it all came together although there was something strangely anti-climactic about sending it off: In the days when you'd print out your manuscript and have to walk to the post office and seal it up carefully to send to the publisher, I imagine it would feel much more ceremonial and important --you could stroll out of the building and do a cartwheel. Or high-five a fellow customer on your way out. Instead, I was sitting in our dining room on an incredibly rainy, dark Monday afternoon unable to hit "send." My sister Zoe told me to just close my eyes and do it. Sam gave me the thumbs up. So around 3 p.m. that's what I did. With the click of a button, just like that: it was finished.
Hello there, August. You have brought with you wonderful tomatoes which I've been eating almost daily, outdoor weddings, a new camera to play with, and sunny clear mornings. You've brought iced coffee with a touch of simple syrup, dinner with friends outside, and nights spent sharing a beer while watching the Olympics (those runners!).
I've been thinking a lot about how I spend my time lately. Mainly because, more than ever, I feel like at the end of the day I plum run out of it. And the feeling of balance seems to be skirting around me. There are so many pieces to each day, between making and shipping granola, sourcing ingredients, trying to gain new granola vendors, writing online columns and freelance articles, writing a proposal for a bigger project, working on the house, planning a little housewarming party -- there's a lot going on. I know I'm not the only one. I know you're busy, too.
I have a very full, spirited life. But sometimes when it comes down to the Christmas spirit it can be a little different. I can be a little tardy in this department. I always make it to the dance, but I can be fashionably late. Getting excited about Christmas can be funny when you're 32-- an in between time when, in my case, you're no longer a child but don't yet have children of your own. The magic doesn't descend upon you any longer. You have to keep your eyes peeled for it. You may even have to go and seek it out.
Most of the recipes I feature on the site are things I've bookmarked and planned out -- I don't often just whip something up on a whim, take a photo, and blog about it. Until this week. Don't get me wrong. I had a recipe planned for you (and it'll appear next week instead. And it's quite wonderful). But this week has brought about some bumps in the road and unexpected surprises. If you could call them that.
It has begun. Talk of who is bringing what, where we'll buy the turkey, what kind of pies I'll make, early morning texts concerning brussels sprouts. There's no getting around it: Thanksgiving is on its way. And with it comes the inevitable reflecting back and thinking about what we're thankful for. And about traditions. The funny thing about traditions is that they exist because they've been around for a long time. Year after year after year. But then, one Thanksgiving maybe there's something new at the table.
Today we've got cookies and sisters on our hands. You may remember me talking about Zoe, my youngest sister, and the weekend she graduated. But I'm not sure that I've talked a whole lot about Rachael. She's the middle sister in our family and loves to cook and eat as much as I do (see proof below). Actually, she's a far better cook than I am. She's one of those intuitive kitchen people who just wings it without a recipe. Confidently. And it all turns out just fine. There's another area where Rachael and I differ in the kitchen: she's a planner, menu-writer, and list maker. Now, don't get me wrong: I love a good list. But I'm not the kind of person who maps out what I'll prepare and eat for the week, makes a shopping list, and lets that list dictate what I buy at the grocery store.
For those of you who follow me on twitter, you've probably gathered that I'm a huge Kim Boyce fan--I really haven't been this excited and inspired by a cookbook in a long time. Perhaps ever. I had the opportunity to meet Kim last week at Omnivore Books and hear her take on the different whole grain flours she uses in Good to the Grain and how each affects the flavor and texture of her recipes. Although it's one of my favorites, I haven't had a piece of pumpkin pie yet this fall. Actually, in the spirit of full disclosure, I did have a few bites of a piece from Mission Pie but that doesn't really count. I seem to have a tendency to over-do it with pumpkin pie and get a little tired of it before Thanksgiving. So I wait, thinking of other ways to use pumpkin. I was leafing through my recipe binder the other night and stumbled across this recipe for Pumpkin Semolina Cake. Semolina flour is available in most supermarkets, so you shouldn't have much trouble finding it. It's often used to make homemade pasta and pizza dough because it has a higher gluten percentage, making pasta stretch easily rather than breaking apart. While Italians use it for pastas, it's traditionally used in Greece, North Africa and the Middle East to make crumbly baked goods. Because of the high egg content in this recipe, the cake is almost pudding-like with a large, moist crumb (thanks to the semolina flour). I'd never baked a cake in a water bath before, although I'd heard of people doing so with cheesecakes. It turns out, it's a common practice with delicate foods and egg-based desserts (of which this is one) because it allows them to cook at a lower, even temperature. This cake is best served warm with a dollop of homemade whipped cream. And I think it's especially nice served with cinnamon or mint tea. It should tide me over until Thanksgiving when I'll savor my first real piece of pumpkin pie. However, I loved this cake so much that--dare I say--it could even be a nice substitute.
This is my favorite soup recipe. Ever. I discovered it in Vegetarian Times when I was a vegetarian and living in Boulder, CO (fitting, I know). But more than anything, this soup reminds me of snowy afternoons in Boston. A whole pot would feed me for a good five days. As a graduate student, I'd stock up on bread, butter, greens, coffee and milk, plenty of tea, and a chocolate bar and I could hibernate for quite some time. The smell of the fennel seeds cooking in olive oil brings me right back to my pink-tiled Brookline kitchen. I'd sit at the bay windows, looking out at elderly Russian women in vibrant silk scarves pushing their shopping carts back from the corner grocery store, and college kids with backpacks and arms of books racing to catch the bus. I'll always equate the smell of this soup with that light-filled pink kitchen, fallen leaves whipping by the windows, and the fading Eastern afternoon light.
